Beef Steak & Stilton Sauce
Ingredients: 10 x 150-175g beef steaks, Rump or Sirloin 30-60ml vegetable oil Salt and freshly milled black pepper 175g red onions, thinly sliced 200-250g Stilton cheese 150ml soft cream cheese 90ml milk 1tsp English mustard Method: 1. Brush each steak with oil and season if desired. 2. Heat frying pan or grill and cook steaks as required. In the meantime braise red onions and set aside. 3. Combine Stilton, cream cheese, milk and mustard in pan. Heat gently for 1 minute. Season. To serve: Pour Stilton sauce over the steaks and serve with the braised red onions, new potatoes and asparagus. Serves: 10
